Recipe: Spinach, Strawberry and Goat Cheese Salad

I found this delicious recipe on The Healthy Bites blog after craving this combo all day.  Fast easy and, if you add a protein source, a main meal.  I added a few basil leaves and pomegranate seeds.

Ingredients for salad

2-3              basil leaves
2 c.             spinach
12 dozen         strawberries
1 oz             goat cheese (feta or blue cheese would also work)
12               walnut halves
2 tbs            pomegranate seeds

Lucini Fig & Balsamic Vinaigrette

Wash spinach and strawberries and drain.

Heat small pan and toast walnuts for 2-4 min on medium high.  Trust your nose and you’ll know when the walnuts are toasted enough.  Cool

Slice strawberries while walnuts are toasting.

Assemble.  I like to rip the basil into the bottom of the bowl, followed by spinach, strawberries and goat cheese.

Drizzle vinaigrette over salad, add salt and pepper to taste.

Garnish with walnut halves and pomegranate seeds.

* Sliced red onions, blueberries, or pears are other add ins.

Quick, Easy and Delicious

I broiled asparagus to go with this.  It was equally delicious!  No guilt for my Wine Wednesday selection.
